There is a huge demand for any food made from eggs among different classes of people. And if the food made from these eggs is the traditional food of a district then there is no question. One such dish is Rangpur’s ‘Dim Telani’.
Rangpur has a distinct aristocracy in cooking. So those who love to eat eggs a little differently can try this recipe.
What you will need: Boiled egg 4, cardamom 3, cinnamon 3, onion slice 1 cup, ginger paste 1/2 teaspoon, garlic paste 1/2 teaspoon, turmeric powder 1 tbsp, chilli powder 1 tsp, coriander Powder 1/2 teaspoon, fried cumin powder 1/2 teaspoon, amount of salt, 4 green chillies, 2 bay leaves.
How to make: Heat oil in a pan and keep stirring with cardamom, cinnamon and chopped onion. When the onion turns brown, add ginger paste and garlic paste. When the spices are fried, add turmeric powder, chilli powder, coriander powder and fried cumin powder. Stir for a while and add 1 cup of water and salt. Add raw chillies during this time of cooking.
When the water is a little dry, add salt and turmeric and add pre-fried eggs. You can fry these eggs in boiled or omelette. Do not stir after frying eggs. Cover with a lid from the top with bay leaves. When the broth thickens, remove it from the oven. It would be great to eat this egg telani with hot rice, bread, paratha or pollao.
